Bacon Cheese Spread

  • 2 cups shredded sharp or mild Cheddar cheese (8 ounces)
  • 1/4 cup Dijon Mustard
  • 2 tablespoons margarine or butter, softened
  • 1/8 teaspoon coarse ground black pepper
  • 1/4 cup dry white wine or beer
  • 2 tablespoons chopped green onions
  • 4 slices bacon, cooked and crumbled
  • 48 Snack Crackers

Mix cheese, mustard, margarine or butter and pepper in blender or food processor until cheese is finely chopped. Heat wine or beer just to a boil. With food processor running, slowly pour hot liquid into cheese mixture; continue processing until almost smooth. Stir in green onions and bacon. Transfer to serving bowl; refrigerate at least 2 hours to blend flavors. Let stand at room temperature 1 hour before serving. Serve as a spread on crackers.
