Pineapple Carrot Salad
- 1 cup shredded carrot
- 1 (8-ounce) can crushed pineapple in its own juice, drained
- 1/2 cup plain lowfat yogurt
- 1/3 cup chopped seedless raisins
- 1 tablespoon honey
- Pecan halves and carrot curls, for garnish
- 52 Snack Crackers
Blend carrot, pineapple, yogurt, raisins and honey in small bowl.
Refrigerate until serving time. Garnish with pecan halves and carrot
curl if desired. Serve as a dip with snack crackers.
