Tropical Chicken Salad

  • 1/3 Cup Dijon Mustard
  • 1/4 cup sour cream
  • 2 cups coarsely cut up cooked chicken
  • 1 Cup diced mango
  • 1 red bell pepper, chopped
  • 1/4 cup chopped fresh parsley or cilantro

Blend mustard and sour cream in large bowl. Add chicken, mango, red pepper and parsley or cilantro, stirring to coat well. Serve on bed of lettuce, in a tortilla or sandwich.
